Almond Apple Galette

Ingredients

For the Filling:  

  • 3 granny smith apples; thinly sliced wedges

  • 1 cup brown sugar

  • 2 tbsp cornstarch

  • ½ tbsp cinnamon 

  • ¼ tsp ground ginger

  • 1 tsp almond extract 

  • 1 tsp salt 

For the Dough:  

  • 1 ½ cups almond flour

  • ½ cup unsalted butter; cold and cubed 

  • ½ tsp salt 

  • 2 tbsp cold water 

  • 1 egg

Instructions

  1. Preheat the oven to 350 degrees F. 

  2. Sift together the almond flour, all purpose flour, and ½ tsp of salt and add to a food processor. 

  3. Add the cubed, cold butter and pulse until crumbly dough forms. Add 2 tbsp of cold water and pulse until dough comes together. 

  4. Wrap dough in plastic wrap and chill in the refrigerator for 30 minutes. 

  5. In a bowl, whisk together the brown sugar, cornstarch, cinnamon, ginder, and salt. 

  6. Add the sliced apples to the sugar mixture and stir until all of the slices are fully coated. Add the almond extract and stir thoroughly. 

  7. On a flour surface, roll the dough into a circle about 14 inches in diameter. 

  8. Starting about 3 inches from the edge, layer the apple slices slightly overlapping each other in a rose-like pattern. Drizzle the remaining sugar mixture over the placed apples. 

  9. Fold over the crust’s edge onto the apples.

  10. Whisk an egg and brush onto the crust. 

  11. Bake for 40 minutes until the filling is bubbly and the crust is golden brown.

Recipe Tips

Use simple syrup to give this galette a glossy finish!

As I was developing this recipe I noticed that it was coming out looking quite dry, even though the inside of the tart was flavorful and juicy. I wanted it to have that extra shine and sheen on the outside as it did on the inside! My solution was to whip up a quick, thicker version of a simple syrup to glaze the top and add that extra wow factor. This is an optional step, but it really is what turns the galette into a show stopping centerpiece for any dessert table!

Thick Simple Syrup:

  • In a saucepan, add 1 cup water, 1 1/2 cup sugar, 1 tsp salt, and 1 tsp lemon juice. Stir continuously and bring to a simmer on medium heat until the sugar dissolves. Lower the heat and cook on low for about 8 minutes, stirring consistently until thickened.
