Apple Turnovers

Yield: 8 turnovers Active Time: 30 minutes Cook Time: 15 minutes Total Time: 45 minutes

Ingredients

  • 2 sheets frozen puff pastry; thawed

  • 3 tbsp butter 

  • 1 granny smith apples; peeled and diced

  • 2 honey crisp apples; peeled and diced

  • ½ tbsp cinnamon 

  • 2 tbsp flour

  • ½ cup brown sugar

  • 1 tbsp lemon juice

  • 1 tbsp cornstarch

  • 1 egg

Instructions

  1. Preheat the oven to 350 degrees. 

  2. In a pan, melt the butter on low heat and add the apple. Cook for 4 minutes, stirring occasionally. 

  3. Stir in the cinnamon, flour, brown sugar, lemon juice, and cornstarch. Stir to fully coat the apples. Cook on low heat for 2 minutes. Transfer to a covered container and chill in the fridge for at least 1 hour. 

  4. Cut the sheets of puff pastry into 8 equal sized rectangles. 

  5. Scoop a little less than a ¼ cup of the apple mixture into the middle of each rectangle. 

  6. Whisk together the egg and 1 tbsp of water. Brush the egg wash around the border of each of the rectangles. Fold them over into triangles, making sure no filling squeezes out the sides. 

  7. Press hard on the edges with your fingers and then seal with a fork, make sure there are no open holes or else the mixture will seep out during baking. 

  8. Brush the top of each turnover with the remaining egg wash. Bake for 15 minutes.
