Cacio e Pepe Crackers

Yield: 36 crackers Active Time: 10 minutes Cook Time: 25 minutes Total Time: 35 minutes (+30 min. chill time)

Ingredients

  • ½ cup parmesan cheese

  • 2 tbsp butter; cold and cubed

  • ½ cup all purpose flour

  • 1 ½ tbsp ice water 

  • ½ tbsp black pepper 

Instructions

  1. Preheat the oven to 350 degrees. 

  2. Add flour, pepper, and cheese to a food processor and pulse until combined. 

  3. Add the butter and blend until the mixture reaches a crumby consistency. 

  4. Slowly add the water and blend until a dough forms. 

  5. Wrap in plastic wrap and refrigerate for at least 30 minutes. 

  6. On a floured surface, roll the dough out until it is ¼ inch thick. 

  7. Cut out 1 ½” by 1 ½” squares. Use a toothpick to poke one holes in the center of each of the crackers. 

  8. Place the crackers on a baking sheet lined with parchment paper. Bake for 25 minutes and place on a cooling rack.
