Cacio e Pepe Crackers
Yield: 36 crackers Active Time: 10 minutes Cook Time: 25 minutes Total Time: 35 minutes (+30 min. chill time)
Ingredients
½ cup parmesan cheese
2 tbsp butter; cold and cubed
½ cup all purpose flour
1 ½ tbsp ice water
½ tbsp black pepper
Instructions
Preheat the oven to 350 degrees.
Add flour, pepper, and cheese to a food processor and pulse until combined.
Add the butter and blend until the mixture reaches a crumby consistency.
Slowly add the water and blend until a dough forms.
Wrap in plastic wrap and refrigerate for at least 30 minutes.
On a floured surface, roll the dough out until it is ¼ inch thick.
Cut out 1 ½” by 1 ½” squares. Use a toothpick to poke one holes in the center of each of the crackers.
Place the crackers on a baking sheet lined with parchment paper. Bake for 25 minutes and place on a cooling rack.
