Caprese Pasta

Yield: 4-5 servings Active Time: 20 minutes Cook Time: 20 minutes Total Time: 40 minutes

Ingredients:

  • 1 box of bowtie pasta 

  • 2 cups mozzarella; shredded

  • 1 8 oz jar of sundried tomatoes

  • ½ yellow onion; chopped

  • 2 cloves garlic 

  • ¼ cup olive oil 

  • 1 cup basil; julienned 

  • Salt and pepper 

Instructions:

  1. Heat the olive oil in a pan on medium heat and add the onions and garlic. Cook for 5 minutes. 

  2. Drain the sun dried tomatoes but reserve about ¼ cup of the oil. Roughly chop the tomatoes and add to the onions. Cook for 5 more minutes. 

  3. Boil a pot of water on the stove. Heavily salt the water then add the pasta and cook for 10 minutes. Drain the pasta. 

  4. Stir in the mozzarella, sundried tomato mixture, basil, and reserved oil. Season with salt and pepper to taste.
