Cherry Chocolate Chunk Scones

Yield: 6 scones Active Time: 20 minutes Cook Time: 25 minutes Total Time: 45 minutes (+1 hr chill time)

Ingredients

  • 1 cup all purpose flour

  • ¼ cup granulated sugar

  • 1 ½ tsp baking powder

  • ¼ cup salted butter; cold and cubed

  • ¼ cup buttermilk; cold

  • 1 tsp vanilla extract

  • ½ cup chocolate chunks

  • ½ cup frozen cherries; chopped

  • 1/4 cup heavy cream

Instructions

  1. Preheat the oven to 400 degrees.

  2. In a food processor, add the flour, sugar, and baking powder and lightly pulse to combine. Add the cubed butter and pulse until the butter is pea sized pieces.

  3. Add the buttermilk and vanilla and pulse only a few times till just combined. It is okay if streaks of flour are still visible during this stage.

  4. Transfer the mixture to a bowl and carefully stir in the chocolate chunks and cherries until evenly combined.

  5. Lay the dough out onto a lightly floured surface and form into a round disk that is about 2 inches thick. Wrap the disk in plastic wrap and chill for 1 hour.

  6. Once chilled, remove the disk from the plastic wrap and lay on a baking sheet lined with parchment paper. Use a sharp knife to cut the dough into 6 triangular pieces as the diagram below shows.

7. Slightly separate the scones on the pan so that they don’t stick together during baking.

8. Use a pastry brush to brush a layer of heavy cream onto the scones. This will help them come out of the oven golden brown.

9. Bake the scones for 20-25 minutes.
