Chile Lime Jackfruit “Chicken Fingers”

Ingredients

For the fingers: 

  • 1 pckg Upton’s Naturals Chile Lime Jackfruit

  • 2 eggs; beaten (or a vegan egg substitute)

  • ½ cup all purpose flour

  • 2 tsp paprika

  • 1 tsp chili powder

  • 1 tsp cayenne pepper

  • 2 tsp lime zest 

  • 2 tsp salt

  • 2 cups oil 

For the sauce:  

  • 1 canned chipotle chile

  • 1 clove garlic

  • 2 tbsp mayonnaise 

  • ½ lime; juiced

Instructions

  1. Pat the jackfruit dry with paper towels. 

  2. Place the beaten eggs in a shallow dish. In a similarly shallow dish, whisk together the flour, chili powder, cayenne pepper, and lime zest. 

  3. Dredge the jackfruit in the flour and let set for five minutes. Dip in the eggs and then dredge in the flour a final time. 

  4. Heat the oil in a pan on medium high heat. Add the jackfruit and fry for 4 minutes. Lower the heat and flip the jackfruit, frying on the other side for about 5 minutes until the crust is golden and cooked through. 

  5. Transfer the fried jackfruit to a paper towel-lined plate and sprinkle with salt. 

  6. In a food processor, add the chiles, mayonnaise, garlic, lime juice and blend until smooth. 

  7. Serve the fried jackfruit with the sauce.
