Christmas Tree Shortbread Cookies

Yield: 18 cookies Active Time: 30 minutes Cook Time: 10 minutes Total Time: 40 minutes (+ 30 min chill time)

Ingredients

For the dough:

  • 2/3 cup salted butter; softened

  • 1/2 cup powdered sugar

  • 1/2 tsp vanilla extract

  • 1/2 tsp almond extract

  • 1 1/4 cup flour

  • 1 tsp salt

  • 5-10 drops of green food coloring

Instructions

  1. Preheat the oven to 350 degrees.

  2. In the bowl of an electric mixer, add the butter and sugar and beat on medium speed until fluffy, about 2 minutes.

  3. Add in the vanilla and almond extract and mix till combined.

  4. In a separate bowl, whisk together the flour and salt. Add the flour mixture to the rest of the ingredients and beat on medium-low speed until a dough forms.

  5. Roll the dough into a log and split into three even sections. Combine two of the sections into a disk, wrap in plastic wrap and chill for 30 minutes.

  6. Add the remaining third of dough back to the mixer and add 5 drops of green food coloring. Mix on low until the color is even throughout, add more food coloring if you desire a deeper color. Form the green dough into a disk, wrap in plastic wrap, and chill for 30 minutes.

  7. Remove both doughs from the fridge. Roll into a 1/2 inch thick round. Use a knife to cut out about 14 tree shapes, 2 inches tall and 1 inches wide. Stack the trees into a log, shape as necessary to always maintain the tree shape.

  8. Roll two thin strips of the non-colored dough, about the length of the tree log. Press the strips into the sides of the trunk. Use the rest of the dough to slowly fill in the area around the tree until it resembles a cylinder.

  9. Lightly roll the cylinder on a flat surface so that the edges are smooth and it is an even log about 3 inches in diameter. Wrap in plastic wrap and chill for 1 hour.

  10. Remove the dough from the plastic wrap and slice into 18 even slices. Place the slices 1 inch apart on a baking sheet lined with parchment paper. Bake for 10 minutes. Let cool for at least 30 minutes before enjoying.
