Edamame Hummus with Sour Cream and Onion Veggies

Ingredients

For the hummus:

  • 1 1/2 cups edamame; shelled and cooked

  • 1 clove garlic

  • 1 tbsp shallot; chopped

  • 2 tbsp basil

  • 2 tbsp tahini

  • 1 tsp salt

  • 1 tsp black pepper

  • 1/4 cup water

  • 1/3 cup olive oil

For the Veggies:

  • Assorted veggies; halved or quartered

  • 1 tbsp French onion soup mix

  • 1 tbsp nutritional yeast

  • 1 tsp salt

  • 1 tsp onion powder

Instructions

  1. In a food processor, add all of the hummus ingredients except for the olive oil. Pulse until all of the ingredients are fully pureed and combined. Puree the ingredients on low speed, slowly adding in the olive oil. Mix until the hummus is smooth and creamy.

  2. In a mortar and pestle or food processor, add the French onion soup mix, salt, onion powder, and nutritional yeast. Grind into a powder.

  3. Sprinkle the veggies cut-side up with the seasoning and serve with the hummus.
