Greek Inspired Chicken Meatball Skewers

Yield: 42 meatballs or 14 skewers Active Time: 25 minutes Cook Time: 15 minutes Total Time: 40 minutes (+45 minutes of cool and chill time)

Ingredients

  • 1 lb ground chicken

  • 1/2 red onion; minced

  • 2 cloves garlic; minced

  • 1/4 cup bread crumbs

  • 1 egg

  • 1/4 cup green olives; chopped

  • 1/4 cup sun dried tomatoes; chopped

  • 1/3 cup parsley; chopped

  • 1/2 red bell pepper; chopped

  • 1/2 tbsp lemon zest

  • 1 tbsp worchestire sauce

  • 1 tsp dried oregano

  • 1 tsp cayenne pepper

  • 1 tsp black pepper

  • 1 tsp fennel seeds

  • 1 tsp salt

Instructions

  1. Preheat the oven to 350 degrees.

  2. In a small bowl, whisk together the oregano, cayenne pepper, black pepper, fennel, and salt.

  3. In a large bowl, add the ground chicken, onion, garlic, breadcrumbs, egg, olives, tomatoes, parsley, bell pepper, lemon zest, worchestire sauce, and the spice mixture.

  4. Combine all of the ingredients with a large spoon or ideally your hands until all of the ingredients are evenly and completley combined.

  5. Especially be sure to make sure the breadcrumbs and eggs are no longer visible and spread throughout the meat in order to prevent certain meatballs from being drier than others.

  6. Cover the meat with aluminum foil and chill for about 30 minutes in the refrigerator.

  7. Roll balls of meat about the size of 2 tablespoons and place at least one inch apart on a baking sheet lined with parchment paper.

  8. Bake for 15 minutes.

  9. Take the meatballs out of the oven and let them cool on the pan for 15 minutes.

  10. Place three meatballs on 6 inch skewers and serve with Green Goddess Tzatziki.
