Grilled Squash with Herby Chard Dressing

Ingredients
1 large green squash; sliced lengthwise
1 large yellow squash; sliced lengthwise
3 tbsp olive oil
Salt and pepper
¼ cup feta cheese; crumbled
For the dressing
4 cups swiss chard
1 cup parsley
2 cloves garlic
½ cup white vinegar
1 tsp black pepper
1 tsp dried oregano
1 tbsp dijon mustard
½ avocado
1 tbsp sugar
¼ cup olive oil
Instructions
Heat a grill to 350 degrees or a grill pan to medium high.
Brush the squash and zucchini with olive oil and sprinkle with salt and pepper on both sides.
Grill the squash for about 5 minutes on each side, until dark char marks are achieved.
In a food processor, add the chard, parsley, garlic, vinegar, black pepper, oregano, dijon mustard, avocado, and sugar.
Puree on high until smooth, about 1 minute. Slowly add in the olive oil while blending on low.
Drizzle the squash with dressing, sprinkle with feta, and serve.
