Grilled Squash with Herby Chard Dressing

Ingredients

  • 1 large green squash; sliced lengthwise

  • 1 large yellow squash; sliced lengthwise 

  • 3 tbsp olive oil 

  • Salt and pepper

  • ¼ cup feta cheese; crumbled 

For the dressing

  • 4 cups swiss chard

  • 1 cup parsley

  • 2 cloves garlic

  • ½ cup white vinegar

  • 1 tsp black pepper

  • 1 tsp dried oregano

  • 1 tbsp dijon mustard 

  • ½ avocado 

  • 1 tbsp sugar 

  • ¼ cup olive oil

Instructions

  1. Heat a grill to 350 degrees or a grill pan to medium high. 

  2. Brush the squash and zucchini with olive oil and sprinkle with salt and pepper on both sides. 

  3. Grill the squash for about 5 minutes on each side, until dark char marks are achieved. 

  4.  In a food processor, add the chard, parsley, garlic, vinegar, black pepper, oregano, dijon mustard, avocado, and sugar. 

  5. Puree on high until smooth, about 1 minute. Slowly add in the olive oil while blending on low. 

  6. Drizzle the squash with dressing, sprinkle with feta, and serve.
