Healthy Edible Cookie Dough

Yield: about 2 cups Active Time: 15 minutes Cook Time: 15 minutes Total Time: 30 minutes (+25 minutes of cool time)

Ingredients

  • 1 1/2 cups plain hummus

  • ½ cup brown sugar

  • 1 ½ cups dark chocolate chunks 

  • ½ cup almond flour 

  • 1 cup peanut butter 

  • 2 tsp vanilla extract 

  • 1 tsp salt

Instructions

  1. Preheat the oven to 400 degrees. 

  2. Line a baking sheet with parchment paper and spread the almond flour out in a thin layer. Bake for 10 minutes then remove from the oven and let cool for 25 minutes. 

  3. Meanwhile, in the bowl of a stand mixer fitted with the paddle attachment, add the bean dip, brown sugar, peanut butter, vanilla extract, and salt. You can also use a hand mixer for this step. 

  4. Beat on medium speed for 2 minutes until the mixture is smooth and evenly combined. 

  5. Fold in the chocolate chips and almond flour until thoroughly combined.
