Homemade Pita Bread

Yield: 10-15 small pitas Active Time: 30 minutes Cook Time: 30 minutes Total Time: 1 hour (+2 hours rest time)

Ingredients

  • ½ cup water

  • 1 tsp active dry yeast

  • ½ tsp granulated sugar

  • 1 ½ cup all purpose flour

  • 2 tsp salt

  • ¼ cup olive oil

Instructions

  1. In a bowl, stir together the water, yeast, and sugar until the sugar and yeast have dissolved. 

  2. Add ¼ cup of the flour to the yeast mixture and whisk to combine. Set the bowl aside and let the mixture turn foaming. This should take about 15 minutes. 

  3. Once the mixture has foamed, add the rest of the flour, salt, and 1 tbsp of the olive oil and stir to combine. 

  4. Knead the dough in the bowl until it forms a loose ball. Transfer the dough to a floured surface and knead for about two minutes until a smooth ball forms. 

  5. In an oil coated bowl, add the bowl of dough and cover with a damp towel. Let the dough rest in a warm area for 15 minutes. 

  6. On a floured surface, knead the dough for another two minutes and return to the bowl. Cover the bowl and let the dough rise for 2 hours. 

  7. On a floured surface, roll the dough into a long log and cut into 15 equal sized pieces. Roll each piece into a thin circle. 

  8. Heat 3 tbsp of olive oil in a large skillet over medium heat. Add the dough to the pan and cook for 4 minutes until the pitas begin to form bubbles. Lower the heat to medium low and turn over the pitas, cooking for 5 minutes on the other side. Transfer the cooked pitas to a paper towel-lined plate or platter. You will most likely have to cook the pita in multiple batches.
