Irish Soda Bread

Yield: 8-10 slices Active Time: 20 minutes Cook Time: 50 minutes Total Time: 70 minutes

Ingredients

  • 3 1/2 cups all purpose flour

  • 2 tbsp granulated sugar

  • 2 tsp salt

  • 1 egg

  • 1 1/2 cups buttermilk

  • 1 tsp baking powder

  • 4 tbsp cold butter; cubed

  • 3/4 cup raisins

  • 1/4 cup heavy cream

Instructions

  1. Preheat your oven to 450°F and line a baking sheet with parchment paper.

  2. In a large bowl, whisk together the flour, baking soda, and salt until well combined.

  3. Add the cold cubes of butter and work it into the flour using your fingers until they become pea sized.

  4. in a separate bowl, whisk together the buttermilk and eggs.

  5. Make a well in the center of the flour mixture and pour in the buttermilk mixture.

  6. Using a wooden spoon to stir the mixture until it comes together into a flaky dough.

  7. Turn the dough out onto a lightly floured surface and press it together into a round loaf.

  8. Place the loaf onto the prepared baking sheet and use a sharp knife to cut a cross into the top of the dough.

  9. Brush the loaf with heavy cream to help achieve a golden brown finish.

  10. Bake for 50 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.

  11. Transfer the bread to a wire rack to cool completely before slicing and serving slathered in butter.
