Maple Bacon Oatmeal Cookies

Ingredients

  • ¾ cups flour 

  • 1 tsp cinnamon 

  • ¼ tsp baking soda 

  • ¼ tsp baking powder

  • 1 tsp salt

  • ½ cup unsalted butter; softened

  • ½ cup brown sugar 

  • ¼ cup maple syrup

  • 1 egg 

  • 1 tsp vanilla extract

  • 1 ½ cups oats 

  • 6 pieces of bacon; cooked and chopped

Instructions

  1. Preheat the oven to 350 degrees. 

  2. In a bowl, whisk together the flour, cinnamon, baking soda, baking powder, and salt. 

  3. In the bowl of a stand mixer, add the butter, brown sugar, and maple syrup. On medium speed, cream together the ingredients until combined, about 2 minutes. 

  4. Add the egg and vanilla and beat in until combined. 

  5. Mix in the flour mixture on medium speed, adding ¼ cup each time and fully combining after each addition. 

  6. With a spatula, fold in the oats and bacon until evenly distributed throughout the dough. 

  7. Line two cookie sheets with parchment paper. Scoop 2 tbsp sized balls of dough at least two inches apart onto the sheets. 

  8. Bake for 20 minutes. Cool on a cooling rack for 10 minutes before serving.
