Maple Bacon Oatmeal Cookies

Ingredients
¾ cups flour
1 tsp cinnamon
¼ tsp baking soda
¼ tsp baking powder
1 tsp salt
½ cup unsalted butter; softened
½ cup brown sugar
¼ cup maple syrup
1 egg
1 tsp vanilla extract
1 ½ cups oats
6 pieces of bacon; cooked and chopped
Instructions
Preheat the oven to 350 degrees.
In a bowl, whisk together the flour, cinnamon, baking soda, baking powder, and salt.
In the bowl of a stand mixer, add the butter, brown sugar, and maple syrup. On medium speed, cream together the ingredients until combined, about 2 minutes.
Add the egg and vanilla and beat in until combined.
Mix in the flour mixture on medium speed, adding ¼ cup each time and fully combining after each addition.
With a spatula, fold in the oats and bacon until evenly distributed throughout the dough.
Line two cookie sheets with parchment paper. Scoop 2 tbsp sized balls of dough at least two inches apart onto the sheets.
Bake for 20 minutes. Cool on a cooling rack for 10 minutes before serving.
