Sweet Chili Cornbread Crackers

Ingredients

  • ½ cup cornmeal 

  • 2 tbsp all purpose flour 

  • 1 tsp baking powder

  • 2 tbsp sugar

  • 1 teaspoon salt

  • 1 tsp red pepper flakes 

  • 1 tsp hot sauce 

  • 1 ½ tablespoons unsalted butter, chilled and cubed

  • ½ tbsp olive oil

  • 2 tbsp ice water

  • ½ tbsp milk

Instructions

  1. Preheat the oven to 350 degrees. 

  2. Add cornmeal, flour, baking powder, sugar, salt, and red pepper flakes to a food processor and pulse until combined. 

  3. Add the butter, oil, and hot sauce and blend until the mixture reaches a crumby consistency. 

  4. Slowly add the milk and water and blend until a dough forms. 

  5. Wrap in plastic wrap and refrigerate for at least 30 minutes. 

  6. On a floured surface, roll the dough out until it is ¼ inch thick. 

  7. Cut out circles with a circumference of about 2 inches. Use a toothpick to poke three holes in each of the crackers. 

  8. Place the crackers on a baking sheet lined with parchment paper. Bake for 20 minutes and place on a cooling rack.
