Sweet Chili Cornbread Crackers
Yield: 24 crackers Active Time: 10 minutes Cook Time: 20 minutes Total Time: 30 minutes
Ingredients
½ cup cornmeal
2 tbsp all purpose flour
1 tsp baking powder
2 tbsp sugar
1 teaspoon salt
1 tsp red pepper flakes
1 tsp hot sauce
1 ½ tablespoons unsalted butter, chilled and cubed
½ tbsp olive oil
2 tbsp ice water
½ tbsp milk
Instructions
Preheat the oven to 350 degrees.
Add cornmeal, flour, baking powder, sugar, salt, and red pepper flakes to a food processor and pulse until combined.
Add the butter, oil, and hot sauce and blend until the mixture reaches a crumby consistency.
Slowly add the milk and water and blend until a dough forms.
Wrap in plastic wrap and refrigerate for at least 30 minutes.
On a floured surface, roll the dough out until it is ¼ inch thick.
Cut out circles with a circumference of about 2 inches. Use a toothpick to poke three holes in each of the crackers.
Place the crackers on a baking sheet lined with parchment paper. Bake for 20 minutes and place on a cooling rack.
