  • 2 cups Cabbage Chopped; red cabbage can be used
  • 2 cups Fresh Baby Spinach Substitute with kale if desired

  • 2 tablespoons Extra Virgin Olive Oil Can substitute with avocado oil
  • 2 cloves Garlic Minced; fresh preferred
  • 1 teaspoon Salt Pink Himalayan salt recommended
  • 1 teaspoon Pepper Black pepper optional
  • 1 teaspoon Smoked Paprika Regular paprika can be used
Optional Toppings
  • 1/4 cup Nuts or Seeds Pumpkin seeds or walnuts
  • 1/2 cup Crumbled Feta Cheese For a tangy top

Method
 

Preparation Steps
  1. Preheat your oven to 425°F (220°C).
  2. Dice your sweet potatoes into even-sized cubes and toss with olive oil, salt, pepper, and smoked paprika.
  3. Spread the seasoned sweet potatoes on a baking sheet and roast for 25-30 minutes, flipping halfway.
  4. Heat a tablespoon of olive oil in a skillet over medium heat.
  5. Add minced garlic and sauté for about 1 minute until fragrant.
  6. Toss in the chopped cabbage and sauté for 5-7 minutes until softened.
  7. Stir in fresh baby spinach and cook for another 2 minutes until wilted.
  8. Mix roasted sweet potatoes with the sautéed greens in a large bowl, adjusting seasoning as necessary.
  9. Serve in bowls and top with optional nuts, seeds, or crumbled feta cheese.
