Preparation Steps
- Preheat your oven to 425°F (220°C).
- Dice your sweet potatoes into even-sized cubes and toss with olive oil, salt, pepper, and smoked paprika.
- Spread the seasoned sweet potatoes on a baking sheet and roast for 25-30 minutes, flipping halfway.
- Heat a tablespoon of olive oil in a skillet over medium heat.
- Add minced garlic and sauté for about 1 minute until fragrant.
- Toss in the chopped cabbage and sauté for 5-7 minutes until softened.
- Stir in fresh baby spinach and cook for another 2 minutes until wilted.
- Mix roasted sweet potatoes with the sautéed greens in a large bowl, adjusting seasoning as necessary.
- Serve in bowls and top with optional nuts, seeds, or crumbled feta cheese.
