  • 2 large Potatoes fresh or leftover, sweet potatoes optional
  • 1 medium Onion or substitute with shallots
  • 1 medium Bell Pepper optional, can swap for tomatoes
For the Eggs
  • 4 large Eggs sunny-side up
  • 2 tablespoons Butter or Oil for frying
For Seasoning
  • 1 teaspoon Paprika
  • 1/2 teaspoon Black Pepper

Method
 

Instructions
  1. Dice your potatoes, onion, and optional bell peppers.
  2. Heat your skillet over medium-high heat with oil or butter and add the diced potatoes. Cook for 8–10 minutes.
  3. Add the diced onions and bell peppers. Sauté for 3–4 minutes.
  4. Gently stir in the diced corned beef and let it cook undisturbed for 5–7 minutes.
  5. Fry your eggs sunny-side up in a separate non-stick pan for 3–4 minutes.
  6. Serve the crispy corned beef hash topped with a fried egg.
