Method
 

Cooking Instructions
  1. Begin by cooking the brown rice according to package instructions, typically about 40-45 minutes. Once done, fluff with a fork and set aside to cool slightly.
  2. In a large skillet, heat a drizzle of extra virgin olive oil over medium heat. Add the fresh broccoli florets and sauté for about 5 minutes, until they are bright green and tender-crisp.
  3. If you're using raw beets, wrap them in foil and place them in a preheated oven at 400°F (200°C). Roast for about 1 hour or until a fork easily pierces them. If pre-roasted beets are handy, skip this step!
  4. In a mixing bowl, whisk together Greek yogurt, honey, lemon juice, cumin, paprika, salt, and pepper until smooth. Taste and adjust seasonings based on your preference.
  5. In large serving bowls, layer the cooked brown rice, sautéed broccoli, and sliced roasted beets in a colorful manner.
  6. Generously drizzle the zesty spiced dressing over the assembled bowls just before serving, ensuring every layer gets a bit of the tangy goodness.
