- Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking dish.
- Combine strawberries, rhubarb, granulated sugar, lemon juice, and cornstarch in a bowl. Stir gently until the fruit is coated.
- Whisk together flour, oats, brown sugar, baking powder, and salt in a separate bowl. Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
- Press half of the crumb mixture into the bottom of the greased baking dish.
- Layer the fruit filling evenly on top of the crust, then sprinkle the remaining crumb mixture over the filling.
- Bake for 35-40 minutes until the top is golden brown and the filling is bubbly.
- Cool the bars completely before cutting them into squares.
