Instructions
  1. Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking dish.
  2. Combine strawberries, rhubarb, granulated sugar, lemon juice, and cornstarch in a bowl. Stir gently until the fruit is coated.
  3. Whisk together flour, oats, brown sugar, baking powder, and salt in a separate bowl. Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
  4. Press half of the crumb mixture into the bottom of the greased baking dish.
  5. Layer the fruit filling evenly on top of the crust, then sprinkle the remaining crumb mixture over the filling.
  6. Bake for 35-40 minutes until the top is golden brown and the filling is bubbly.
  7. Cool the bars completely before cutting them into squares.
