- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Whisk together the canned pumpkin puree, tahini, and brown sugar in a large bowl until smooth and well combined.
- In another bowl, mix together the all-purpose flour, baking soda, ground cinnamon, ground nutmeg, and salt.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Drop rounded tablespoons of dough onto the prepared baking sheet, allowing space between each.
- Bake for 12-15 minutes until the edges are lightly golden and soft in the center.
