How to Make Italian Penicillin Soup
  1. Heat olive oil in a heavy-bottomed pot over medium heat.
  2. Sauté diced onion, carrots, and celery for 5-7 minutes until softened.
  3. Add minced garlic and cook until fragrant, about 1 minute.
  4. Pour in chicken broth and add the chicken breast, bay leaves, oregano, thyme, and red pepper flakes.
  5. Bring to a gentle boil, then simmer uncovered for 25-30 minutes until the chicken is cooked.
