Method
 

Cooking Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Dice your sweet potatoes and toss them in olive oil, salt, pepper, and smoked paprika. Spread on a lined baking sheet.
  3. Roast sweet potatoes for 25-30 minutes, turning halfway through.
  4. Heat a skillet over medium heat, add olive oil and minced garlic, sauté for about a minute.
  5. Add chopped cabbage and cook for 5-7 minutes until softened.
  6. Toss in the fresh spinach and cook for another 2 minutes until wilted.
  7. Mix the roasted sweet potatoes with the sautéed cabbage and spinach in a large bowl.
  8. Serve warm with optional nuts or seeds on top.
