For the Filling

  • 1 cup Pumpkin Puree You can use homemade puree for an extra touch.
  • 1 tsp Pumpkin Pie Spice Can be substituted with a mix of cinnamon, nutmeg, and ginger.

  • 8x8-inch baking dish
  • Mixing bowl
  • Electric mixer

Method

How to Make Pumpkin Cheesecake Bars
  1. Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish or line it with parchment paper for easy removal later.
  2. In a bowl, combine graham cracker crumbs, ¼ cup sugar, and melted butter. Mix well and press the mixture evenly into the bottom of your prepared dish.
  3. Beat the softened cream cheese in a large mixing bowl until it’s smooth. Gradually add the remaining sugar, blending well. Incorporate the pumpkin puree, pumpkin pie spice, vanilla extract, and eggs one at a time until fully combined.
  4. Pour the creamy filling over the crust and bake for 30-35 minutes. You’re looking for edges that are set while the center jiggles just slightly.
  5. Remove from the oven and let the bars cool at room temperature for one hour. Then chill them in the refrigerator for at least two hours or preferably overnight.
  6. Once chilled, cut the bars into squares and serve them chilled or at room temperature.
