How to Make Pumpkin Cheesecake Bars
- Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish or line it with parchment paper for easy removal later.
- In a bowl, combine graham cracker crumbs, ¼ cup sugar, and melted butter. Mix well and press the mixture evenly into the bottom of your prepared dish.
- Beat the softened cream cheese in a large mixing bowl until it’s smooth. Gradually add the remaining sugar, blending well. Incorporate the pumpkin puree, pumpkin pie spice, vanilla extract, and eggs one at a time until fully combined.
- Pour the creamy filling over the crust and bake for 30-35 minutes. You’re looking for edges that are set while the center jiggles just slightly.
- Remove from the oven and let the bars cool at room temperature for one hour. Then chill them in the refrigerator for at least two hours or preferably overnight.
- Once chilled, cut the bars into squares and serve them chilled or at room temperature.
