  • 3/4 cup Granulated Sugar coconut sugar can be used
  • 1 teaspoon Vanilla Extract can add almond extract for variation
For the Pudding Topping
  • 1 pkg Chocolate Pudding may try different flavors
  • 2 cups Whole Milk can substitute with almond milk
  • 8 oz Whipped Topping (Cool Whip) or fresh whipped cream

How to Make Italian Love Cake
  1. Preheat your oven to 350°F (175°C) and generously grease a 9x13-inch baking dish.
  2. In a mixing bowl, combine ricotta, granulated sugar, and vanilla extract. Beat until smooth, then gradually blend in the eggs.
  3. In another bowl, mix Devil's Food Cake mix, canola oil, water, and eggs until just combined.
  4. Pour the chocolate cake batter into the prepared baking dish, then gently pour the ricotta mixture over it.
  5. Bake in the preheated oven for 1 hour to 1 hour and 10 minutes. Check for doneness.
  6. Once baked, let the cake cool to room temperature.
  7. In another bowl, whisk chocolate pudding mix and cold milk until thickened, then fold in whipped topping.
  8. After the cake has cooled, spread the pudding mixture evenly over the top and refrigerate for at least 4 hours before serving.
