  • 1 cup Heavy Cream

  • 3 cloves Minced Garlic Freshly minced yields the best results.
  • 1/2 cup Parmesan Cheese Can be substituted with nutritional yeast.
For the Vegetables
  • 5 ounces Fresh Spinach Kale can be used as a substitute.
  • 8 ounces Mushrooms Button or cremini mushrooms, can substitute with shiitake or portobello.
For Seasoning
  • to taste Salt
  • to taste Pepper

Method
 

Cooking Instructions
  1. Heat butter in a skillet over medium heat. Add the chopped mushrooms and cook until golden brown, about 5 minutes.
  2. Once the mushrooms are brown, stir in the minced garlic and sauté for about 1 minute until fragrant.
  3. Add fresh spinach to the skillet and cook until wilted, about 3 minutes.
  4. Pour in the heavy cream, stirring continuously to allow it to simmer on low heat for about 5 minutes.
  5. Stir in the grated Parmesan cheese, along with salt and pepper to taste. Mix well and heat everything through.
  6. Serve the creamy spinach mixture, optionally drizzling more sauce on top.
