Steps to Make Chutney
  1. Begin by peeling and dicing the ripe persimmons. Then, chop the onion and garlic, and grate the fresh ginger to have all your flavorful components ready to go.
  2. In a medium saucepan, heat a drizzle of oil over medium heat. Sauté the chopped onion and garlic until they become fragrant and translucent, about 5 minutes.
  3. Next, stir in the diced persimmons, grated ginger, brown sugar, cider vinegar, and cinnamon stick. Mix everything thoroughly to harmonize those flavors.
  4. Bring the mixture to a gentle boil, then reduce the heat to low. Let it simmer uncovered for about 30 minutes, stirring occasionally.
  5. After simmering, taste and add salt as needed to elevate the flavors. Allow it to cool before transferring to jars.
