Method
 

How to Make
  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
  2. In a mixing bowl, mash 1 cup of ripe persimmons until smooth.
  3. In another bowl, cream together ½ cup of softened unsalted butter, ¾ cup of brown sugar, and ½ cup of granulated sugar until light and fluffy.
  4. Add the smooth persimmon mash, 1 egg, and 1 teaspoon of vanilla extract to the creamed mixture and stir well.
  5. Gently fold in 1 ½ cups of all-purpose flour, 1 teaspoon of baking soda, and ½ teaspoon of salt.
  6. Fold in 1 cup of chocolate chips until evenly distributed.
  7. Scoop rounded spoonfuls of dough onto the baking sheet, spacing them apart. Bake for 12-15 minutes.
  8. Let the cookies cool slightly on the baking sheet before transferring to a wire rack.
