How to Make Irresistible Citrus Breakfast Couscous
- In a medium saucepan, bring 1 cup of water to a boil.
- Once the water is boiling, remove the pan from heat and quickly stir in the whole wheat couscous. Cover the saucepan immediately and let it sit for 5 minutes to absorb all the liquid.
- While the couscous is resting, zest the large orange with a grater, then cut it in half and juice it into a small bowl.
- Take your Medjool dates and chop them into small pieces.
- Fluff the cooked couscous with a fork in a large bowl. Gently fold in the orange zest, freshly squeezed juice, chopped dates, and raw honey until everything is well mixed.
- In a skillet over medium heat, toast the sliced almonds for 3–4 minutes until they turn golden brown.
- Plate the vibrant couscous mixture and generously top with the toasted almonds. It can be enjoyed warm or chilled.
