How to Make Irresistible Citrus Breakfast Couscous
  1. In a medium saucepan, bring 1 cup of water to a boil.
  2. Once the water is boiling, remove the pan from heat and quickly stir in the whole wheat couscous. Cover the saucepan immediately and let it sit for 5 minutes to absorb all the liquid.
  3. While the couscous is resting, zest the large orange with a grater, then cut it in half and juice it into a small bowl.
  4. Take your Medjool dates and chop them into small pieces.
  5. Fluff the cooked couscous with a fork in a large bowl. Gently fold in the orange zest, freshly squeezed juice, chopped dates, and raw honey until everything is well mixed.
  6. In a skillet over medium heat, toast the sliced almonds for 3–4 minutes until they turn golden brown.
  7. Plate the vibrant couscous mixture and generously top with the toasted almonds. It can be enjoyed warm or chilled.
