  • 4 cups Stale Bread Cubes Use crusty bread for better texture.
  • 1/2 cup Butter Can be substituted with olive oil.
  • 1 cup Onions Finely chopped.
  • 1 cup Celery Finely chopped.
For the Flavor
  • 1 cup Dried Cranberries
  • 1 cup Chopped Pecans Can substitute with walnuts or almonds.
  • 2 cups Vegetable Broth Warm before adding.
  • 1 teaspoon Thyme
  • 1 teaspoon Sage
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Prepare a 9x13 inch baking dish with nonstick spray.
  2. Melt butter in a skillet over medium heat. Add finely chopped onions and celery, cooking until they soften, about 5 minutes.
  3. In a large mixing bowl, combine stale bread cubes, sautéed onions and celery, dried cranberries, chopped pecans, thyme, sage, salt, and pepper.
  4. Gradually pour in warm vegetable broth, mixing until the stuffing is moist but not soggy.
  5. Transfer the mixture into your prepared baking dish. Cover with foil and bake for 20 minutes, then remove the foil and bake for an additional 10 minutes.
  6. Allow the stuffing to cool briefly before serving.
