Preparation
- Preheat your oven to 350°F (175°C). Prepare a 9x13 inch baking dish with nonstick spray.
- Melt butter in a skillet over medium heat. Add finely chopped onions and celery, cooking until they soften, about 5 minutes.
- In a large mixing bowl, combine stale bread cubes, sautéed onions and celery, dried cranberries, chopped pecans, thyme, sage, salt, and pepper.
- Gradually pour in warm vegetable broth, mixing until the stuffing is moist but not soggy.
- Transfer the mixture into your prepared baking dish. Cover with foil and bake for 20 minutes, then remove the foil and bake for an additional 10 minutes.
- Allow the stuffing to cool briefly before serving.
