  • 2 cups Low-Sodium Vegetable Broth Homemade broth is ideal.
  • 2 tablespoons Curry Powder Adjust to taste.
  • 3 cloves Garlic Minced; fresh is best.
  • 1 inch Fresh Ginger Grated; use less if substituting with ground ginger.
  • 1 medium Onion Diced; yellow or sweet onions preferred.
For the Optional Greens
  • 2 cups Fresh Spinach Optional for added nutrition.

Cooking Instructions
  1. In a large pot over medium heat, sauté diced onions in oil until they turn translucent.
  2. Mix in minced garlic and grated ginger; cook for about 1 minute until fragrant.
  3. Stir in curry powder and continue cooking for another minute.
  4. Add the chopped cabbage and cook until slightly wilted, about 5 minutes.
  5. Pour in the vegetable broth and coconut milk, then bring to a gentle simmer.
  6. Stir in the rinsed lentils, bring to a boil, then reduce the heat, cover, and simmer for about 20 minutes.
  7. If using spinach, add it just before serving, stirring until it has wilted.
