- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In a large bowl, whisk together the all-purpose flour, baking soda, and salt until well combined.
- In a separate bowl, beat the softened unsalted butter, granulated sugar, and packed brown sugar together until light and fluffy, about 3 minutes.
- Add in the large egg, lime zest, and freshly squeezed lime juice. Mix thoroughly.
- Gradually add the dry ingredients to the wet mixture, stirring gently to combine.
- Fold in the chopped macadamia nuts and unsweetened coconut flakes.
- Drop portions of cookie dough onto your prepared baking sheet and bake for 10-12 minutes until edges are golden brown.
- Allow cookies to cool on the baking sheet for a few minutes before transferring.
