  • 1 cup Granulated Sugar or coconut sugar
  • 1/2 cup Brown Sugar (packed)
  • 1 large Egg or flax egg for vegan option
  • 1 tablespoon Lime Zest fresh preferred
  • 2 tablespoons Lime Juice (freshly squeezed) fresh juice preferred
  • 1 cup Chopped Macadamia Nuts or walnuts/pecans
  • 1 cup Unsweetened Coconut Flakes choose sweetened for added sweetness

Method
 

Preparation Instructions
  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large bowl, whisk together the all-purpose flour, baking soda, and salt until well combined.
  3. In a separate bowl, beat the softened unsalted butter, granulated sugar, and packed brown sugar together until light and fluffy, about 3 minutes.
  4. Add in the large egg, lime zest, and freshly squeezed lime juice. Mix thoroughly.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently to combine.
  6. Fold in the chopped macadamia nuts and unsweetened coconut flakes.
  7. Drop portions of cookie dough onto your prepared baking sheet and bake for 10-12 minutes until edges are golden brown.
  8. Allow cookies to cool on the baking sheet for a few minutes before transferring.
