How to Make
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Whisk together flour, baking soda, cinnamon, and a pinch of salt in a medium bowl.
- Mix pumpkin puree, granulated sugar, and vegetable oil in a separate large bowl until smooth. Add eggs one at a time.
- Combine the dry ingredients into the wet mixture and stir until just incorporated.
- Scoop tablespoon-sized rounds of batter onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 12–15 minutes.
- Prepare the filling by beating cream cheese with powdered sugar and vanilla until fluffy. Spread the filling between two cookie halves.
