How to Make Irresistible Healthier Vegan Baklava Cups
  1. Preheat your oven to 350°F (175°C) and grease your muffin tins generously with coconut oil.
  2. Unroll your phyllo dough and cover it with a damp cloth to keep it moist.
  3. Take a single phyllo sheet, brush it with melted coconut oil, and add another sheet on top. Repeat until you have five layers in each muffin cup.
  4. In a mixing bowl, combine chopped walnuts, cinnamon, and maple syrup. Fill each phyllo cup generously with the mixture.
  5. Add a final layer of phyllo, brushing it again with coconut oil for a golden finish.
  6. Bake in the preheated oven for 25-30 minutes until golden brown and crispy. Drizzle with extra maple syrup if desired.
