Method
 

Directions

  3. In another bowl, cream together the unsalted butter and sugar until fluffy.
  4. Beat in the eggs one at a time, followed by the lemon zest and juice until creamy.
  5. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
  6. Transfer the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes.
  7. Let the loaf cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  8. In a mixing bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth.
  9. Once the loaf is cool, generously spread the cream cheese frosting on top and serve.
