How to Make Irresistible Pumpkin Brookies
- Preheat your oven to 350°F (175°C). Prepare your baking pan by greasing it or lining it with parchment paper.
- In a bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt until well combined.
- In a large mixing bowl, beat together granulated sugar, brown sugar, and softened butter until light and fluffy. Add in pumpkin puree and eggs, followed by vanilla extract.
- Gradually fold your dry ingredient mix into the wet mixture until just combined. A few lumps are okay!
- Gently fold in the semi-sweet chocolate chips until evenly distributed.
- Spread half of the batter into the prepared baking pan. Bake for about 20 minutes or until set. Allow cooling slightly before adding more batter and baking again.
