Method
 

How to Make
  1. Preheat the oven to 400°F (200°C) and lightly grease a baking dish with nonstick spray.
  2. Whisk together soy sauce, brown sugar, minced garlic, and rice vinegar in a bowl.
  3. Coat the chicken breasts by placing them in the baking dish and pouring half of the teriyaki sauce over them.
  4. Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C). Let the chicken rest for 5 minutes before slicing.
  5. Assemble your poke bowl by layering the cooked rice at the bottom, topping it with sliced chicken, fresh vegetables, and avocado slices.
