Preparation
- Prepare the Dough: In a large mixing bowl, whisk together the flour, granulated sugar, and salt. Add the cold butter cubes and mix until the mixture resembles coarse crumbs.
- Bring It Together: Gradually add the ice water, mixing until the dough comes together. Shape it into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
- Slice Apples: While the dough chills, peel and thinly slice your apples. In a separate bowl, toss them with brown sugar, cinnamon, and a pinch of salt.
- Roll Out Dough: Preheat your oven to 400°F (200°C). Place the chilled dough on parchment paper and roll it into a circle about 12 inches in diameter.
- Assemble Galette: Transfer the rolled dough onto a baking sheet. Pile the spiced apples in the center and gently fold the edges over the apples.
- Bake and Drizzle: Bake in the preheated oven for 30 minutes or until the crust is golden brown. Meanwhile, prepare your caramel by melting sugar over medium heat until golden, then carefully stir in heavy cream and sea salt.
- Drizzle the warm caramel over the baked galette before serving.
