Prepare the Galette
- Whisk together all-purpose flour, granulated sugar, and salt in a large bowl. Cut in cold butter until the mixture resembles coarse crumbs. Gradually add ice water, mixing until just combined, then shape into a disk. Refrigerate for at least 1 hour.
- Core and thinly slice your chosen apples. Toss them with brown sugar, cinnamon, and a pinch of salt until evenly coated; set aside.
- Preheat your oven to 400°F (200°C). Roll the chilled dough out on parchment paper into a 12-inch circle.
- Transfer the rolled dough to a baking sheet. Place the spiced apple filling in the center, leaving a 2-inch border. Fold the edges over the filling.
- Bake in the preheated oven for approximately 30 minutes, or until the crust is golden brown and the apples are tender.
- While the galette is baking, melt granulated sugar in a saucepan over medium heat until it turns golden. Slowly stir in heavy cream and sea salt off the heat until smooth.
- Once baked, remove the galette from the oven and drizzle the warm salted caramel over the top. Serve warm or at room temperature.
