Method
 

Prepare the Galette
  1. Whisk together all-purpose flour, granulated sugar, and salt in a large bowl. Cut in cold butter until the mixture resembles coarse crumbs. Gradually add ice water, mixing until just combined, then shape into a disk. Refrigerate for at least 1 hour.
  2. Core and thinly slice your chosen apples. Toss them with brown sugar, cinnamon, and a pinch of salt until evenly coated; set aside.
  3. Preheat your oven to 400°F (200°C). Roll the chilled dough out on parchment paper into a 12-inch circle.
  4. Transfer the rolled dough to a baking sheet. Place the spiced apple filling in the center, leaving a 2-inch border. Fold the edges over the filling.
  5. Bake in the preheated oven for approximately 30 minutes, or until the crust is golden brown and the apples are tender.
  6. While the galette is baking, melt granulated sugar in a saucepan over medium heat until it turns golden. Slowly stir in heavy cream and sea salt off the heat until smooth.
  7. Once baked, remove the galette from the oven and drizzle the warm salted caramel over the top. Serve warm or at room temperature.
