- Rinse 1 cup of brown rice under cold water. Combine it with 2 cups of water in a saucepan. Bring to a boil, then reduce the heat to low, cover, and simmer for 45 minutes until tender. Fluff with a fork.
- Preheat your oven to 400°F (200°C). Wrap each beet in foil and roast them for about 1 hour until they are fork-tender. Let them cool, peel off the skin, and slice them into bite-sized pieces.
- In a skillet, heat 1 tablespoon of extra virgin olive oil over medium heat. Add fresh spinach and sauté it for about 3 minutes until wilted. Season with salt and pepper to taste.
- In a bowl, whisk together tahini, lemon juice, minced garlic, and a little water until you reach your desired consistency. Adjust seasoning with salt and pepper as needed.
- Start with a base of fluffy brown rice on your plate or bowl. Layer it with roasted beets and sautéed spinach. Drizzle generously with creamy tahini dressing and enjoy every bite.
