  • 2 medium Beets Roast until fork-tender.
  • 2 cups Fresh Spinach Can substitute with kale.
Tahini Dressing Ingredients
  • 1/4 cup Tahini Substitute sunflower seed butter if allergic.
  • 2 tablespoons Lemon Juice Preferably freshly squeezed.
  • 1 clove Garlic Minced for flavor.
  • 2 tablespoons Extra Virgin Olive Oil Can use flaxseed or avocado oil.
  • to taste Salt
  • to taste Pepper
Optional Toppings
  • 1 medium Avocado Sliced for garnish.
  • 1/4 cup Toasted Nuts or Seeds Almonds, walnuts, or sunflower seeds.
  • 1 cup Chickpeas or Roasted Legumes Adds protein to the dish.

Method
 

Preparation Instructions
  1. Rinse 1 cup of brown rice under cold water. Combine it with 2 cups of water in a saucepan. Bring to a boil, then reduce the heat to low, cover, and simmer for 45 minutes until tender. Fluff with a fork.
  2. Preheat your oven to 400°F (200°C). Wrap each beet in foil and roast them for about 1 hour until they are fork-tender. Let them cool, peel off the skin, and slice them into bite-sized pieces.
  3. In a skillet, heat 1 tablespoon of extra virgin olive oil over medium heat. Add fresh spinach and sauté it for about 3 minutes until wilted. Season with salt and pepper to taste.
  4. In a bowl, whisk together tahini, lemon juice, minced garlic, and a little water until you reach your desired consistency. Adjust seasoning with salt and pepper as needed.
  5. Start with a base of fluffy brown rice on your plate or bowl. Layer it with roasted beets and sautéed spinach. Drizzle generously with creamy tahini dressing and enjoy every bite.
