Preparation
  1. In a bowl, combine the pomegranate juice, minced garlic, rosemary, brown sugar, salt, and pepper. Mix until well blended to create a vibrant marinade bursting with flavor.
  2. Place the lamb chops in a resealable bag or shallow dish, pouring the marinade over them. Seal or cover, and refrigerate for at least 2 hours—preferably overnight for deep flavor.
  3. Preheat your grill to medium-high heat or set your oven to broil.
  4. Take the lamb chops from the marinade, ensuring to let the excess drip off.
  5. Grill or broil the lamb chops for 4-5 minutes on each side, cooking until they reach medium-rare perfection, about 130°F.
  6. In the last minute of cooking, brush the remaining marinade on the lamb chops for an extra boost of flavor.
  7. Once cooked, garnish with fresh rosemary and present these stunning lamb chops on a platter.
