Method
 

Directions
  1. Preheat the Oven: Start by preheating your oven to 350°F (175°C) and line an 8x8 inch square baking dish with parchment paper.
  2. Mix the Crust: In a mixing bowl, combine graham cracker crumbs, brown sugar, and melted butter. Stir until well blended and then press the mixture into the bottom of the prepared pan.
  3. Prepare the Cheesecake Filling: In another bowl, beat the softened cream cheese until smooth. Gradually add granulated sugar and continue mixing until fluffy. Mix in sour cream, adding the eggs one at a time. Finally, incorporate the molasses, ginger, cinnamon, and nutmeg until combined.
  4. Layer and Swirl: Pour half of the cheesecake mixture over the crust. Spoon dollops of the remaining mixture on top and gently swirl with a knife.
  5. Bake to Perfection: Bake for 30-35 minutes until the center is set but slightly jiggly.
  6. Cool and Chill: Let the bars cool completely at room temperature, then refrigerate for at least two hours.
