Preparation Steps
  1. Preheat the oven to 350°F (175°C) and grease an 8x8-inch baking dish.
  2. In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press firmly into the bottom of the prepared dish.
  3. Beat the softened cream cheese until smooth. Gradually add sugar, then mix in pumpkin puree, pumpkin pie spice, vanilla extract, and eggs one at a time.
  4. Pour the filling over the crust and bake for 30-35 minutes or until the edges are set.
  5. Allow the bars to cool at room temperature for about 1 hour, then refrigerate for at least 2 hours.
  6. Cut into squares and serve chilled or at room temperature, optionally topped with caramel sauce or whipped cream.
