Preparation Steps
- Preheat the oven to 350°F (175°C) and grease an 8x8-inch baking dish.
- In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press firmly into the bottom of the prepared dish.
- Beat the softened cream cheese until smooth. Gradually add sugar, then mix in pumpkin puree, pumpkin pie spice, vanilla extract, and eggs one at a time.
- Pour the filling over the crust and bake for 30-35 minutes or until the edges are set.
- Allow the bars to cool at room temperature for about 1 hour, then refrigerate for at least 2 hours.
- Cut into squares and serve chilled or at room temperature, optionally topped with caramel sauce or whipped cream.
