Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Prepare the sweet potatoes by peeling and dicing them into bite-sized cubes. Toss the cubes with extra virgin olive oil, salt, and pepper until they are evenly coated.
  3. Roast the sweet potatoes on a lined baking sheet for 25-30 minutes.
  4. Whisk together the lemon juice, honey, salt, and pepper in a small bowl while the sweet potatoes are roasting.
  5. Combine the roasted sweet potatoes with fresh spinach, diced red bell pepper, feta cheese, and spirulina powder in a large bowl.
  6. Drizzle with your homemade dressing and toss gently until well mixed.
  7. Serve your salad warm or at room temperature.
