Making the Dip
- In a food processor, combine feta cheese, cream cheese, olive oil, lemon juice, and optional garlic. Blend for 2–3 minutes until the mixture is smooth and fluffy.
- In a dry skillet over medium heat, toast the chopped pistachios for 3–4 minutes until they become lightly golden and fragrant.
- Place honey in the microwave and heat it for 10–15 seconds just until it’s drizzly.
- Scoop the whipped feta mixture into a serving bowl, creating swoops for the toppings.
- Drizzle the warm honey over the whipped feta, sprinkle with toasted pistachios and cranberries.
- Serve immediately with warm pita, crunchy crackers, or fresh veggies.
