How to Make Jalapeño Popper Corn Fritters
- In a large bowl, combine fresh corn kernels, flour, egg, grated cheddar, cream cheese, diced jalapeños, cooked bacon (if using), smoked paprika, ground coriander, chopped green onions, cilantro (if desired), lime zest, and lime juice. Mix until everything is well distributed.
- In a skillet over medium heat, add enough oil to create a thin layer that will help fry the fritters to a crispy perfection.
- Using about ¼ cup of the batter, scoop and form it into small fritters. Flatten them slightly so they cook evenly.
- Carefully place the shaped fritters into the hot oil. Fry for 3–4 minutes on each side until they turn a lovely golden brown and crispy.
- Once perfectly browned, transfer the fritters to a plate lined with paper towels to drain any excess oil.
- Enjoy these fritters while they're hot! Pair them with your choice of dipping sauces like creamy ranch or spicy chipotle mayo.
