Ingredients

For the Dough
  • 1 large Egg provides structure and moisture; using a chilled egg helps achieve better dough consistency.
  • 130 g Pure Milk adds moisture and enriches flavor; feel free to substitute with non-dairy milk for a vegan option.
  • 260 g High-Gluten Flour offers structure and elasticity to the dough; you can use regular bread flour instead if needed.
  • 30 g White Sugar adds sweetness and supports fermentation; adjust this according to your taste preference.
  • 3 g Highly Active Yeast essential for fermentation and leavening; always check for freshness for the best results.
  • 20 g Butter contributes to flavor and tenderness; substitute with coconut oil for a dairy-free option.
  • 3 g Salt enhances flavor and regulates yeast activity; reducing salt may impact how well the yeast works.
For the Filling
  • 40 g Black Sesame Powder key ingredient for adding a rich nutty flavor; can be swapped with black sesame paste in moderation.
  • 20 g Coconut Oil adds moisture and flavor; you can replace this with softened butter if you prefer.
  • 10 ml Water helps achieve the desired consistency for the filling; add slowly as needed to avoid excess moisture.

Equipment

  • bread machine
  • Mixing bowl
  • Baking Pan
  • wire rack

Method

Preparation Steps
  1. In a bread machine, combine the large egg, chilled milk, high-gluten flour, sugar, and yeast. Knead the mixture for about 5–6 minutes until well combined and slightly elastic.
  2. Add the softened butter and salt to the dough. Knead for an additional 10 minutes until the dough becomes smooth and elastic in texture.
  3. Shape the dough into a ball and place it in a lightly greased bowl. Cover and let it rise in a warm area until it has doubled in size, which should take roughly 1 hour.
  4. While the dough rises, mix the black sesame powder, coconut oil, and sugar with the water to create a spreadable filling. For the crumble topping, rub the flour and sugar with the coconut oil until it becomes crumbly and textured.
  5. Once the dough has risen, roll it out on a lightly floured surface. Spread the black sesame filling evenly over the surface. Fold the dough, cut it into strips, then roll the strips together and place them in a greased pan.
  6. Allow the assembled dough to rise again in a warm area until it puffs up, which will take about another 30 minutes.
  7. Brush the top of the risen loaf with a beaten egg and sprinkle the crumble topping over it. Bake in a preheated oven at 350°F for about 30 minutes, or until the top is golden brown.
  8. After baking, let the loaf cool in the pan for about 5 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
