Ingredients
  

For the Chicken and Zucchini
  • 4 pieces Boneless, Skinless Chicken Breasts Can be replaced with chicken thighs for juicier texture.
  • 2 medium Zucchini Summer or yellow squash may be substituted.
For the Flavor Base
  • 2 tablespoons Olive Oil Avocado oil works well as an alternative.
  • 3 cloves Garlic Fresh minced is best, dried can be used.
  • 2 tablespoons Lemon Juice Fresh juice is ideal, bottled is acceptable.
  • 1 teaspoon Dried Oregano Opt for fresh herbs if available.
  • 1 teaspoon Dried Basil Opt for fresh herbs if available.
  • 1 teaspoon Salt Season to taste.
  • 1 teaspoon Black Pepper Season to taste.
For the Cheesy Topping
  • 1 cup Shredded Mozzarella Cheese Feta can be used for tang.
  • 1/2 cup Grated Parmesan Cheese Omit for a lighter dish.
For Garnishing
  • 1 tablespoon Fresh Parsley Can replace with basil or cilantro.

Method
 

  1. Preheat the oven to 400°F (200°C). This ensures the dish cooks evenly and the cheese gets perfectly golden brown.
  2. Toss chicken and zucchini slices in a large bowl with olive oil, minced garlic, lemon juice, oregano, basil, salt, and pepper. Mix until everything is well coated and fragrant.
  3. Spread the mixture evenly in a 9x13-inch baking dish.
  4. Sprinkle mozzarella and Parmesan cheese generously over the top.
  5. Bake uncovered for 25-30 minutes. Ensure the chicken reaches 165°F (75°C) and the cheese turns golden and bubbly.
  6. Garnish with fresh parsley just before serving.
