Method
 

Preparation Steps
  1. In a bowl, combine melted butter and Irish whiskey. Immerse the sirloin steak in this mixture and marinate for 3 to 24 hours.
  2. Preheat a cast iron pan over medium-high heat and sear the steak for 3-4 minutes on each side until browned.
  3. Transfer the steak to a preheated oven at 350°F and bake for about 10 minutes or until desired doneness.
  4. Boil potatoes in salted water until tender, then mash with finely chopped kale and season with salt and pepper.
  5. In the same pan, sauté shallots until translucent, deglaze with whiskey, stir in cream, and simmer until thickened.
  6. Serve the steak on a bed of colcannon topped with whiskey cream sauce and optionally garnish with chopped parsley.
