- Marinate Chicken: Pat the chicken dry, then dice it into bite-sized pieces. Combine the chicken with olive oil, lime juice, chili powder, onion powder, garlic powder, smoked paprika, salt, and chipotle pepper in a mixing bowl. Let it marinate for 15 minutes to 24 hours for deeper flavor.
- Cook Rice: While the chicken is marinating, prepare the rice according to the package instructions.
- Sauté Chicken: Heat a skillet over medium heat. Add the marinated chicken and sauté for 12-15 minutes until cooked through. Set the chicken aside once cooked.
- Sauté Vegetables: In the same skillet, add chopped red bell pepper, jalapeño, and red onion. Sauté for about 8 minutes, then add garlic.
- Combine: Return the cooked chicken to the skillet and mix with vegetables until warmed through. Prepare tortillas for wrapping.
- Assemble Wraps: Layer wraps with rice, chicken-vegetable mixture, black beans, corn, cotija cheese, and sauce. Fold and wrap tightly.
