Ingredients
  

For the Chicken Marinade
  • 2 pieces chicken breasts swap with turkey or tofu for variety
  • 1 tablespoon lime juice fresh lime gives the best taste
  • 1 teaspoon chili powder adjust to your heat preference
  • 1 teaspoon onion powder fresh onions can also work
  • 1 teaspoon garlic powder fresh garlic can be used
  • 1 teaspoon smoked paprika regular paprika is an acceptable substitute
  • 1/2 teaspoon salt adjust according to taste
  • 2 tablespoons olive oil avocado oil works as a substitute
  • 1 tablespoon chipotle pepper in adobo omit for milder wrap
For the Wraps
  • 4 large tortillas opt for whole grain or gluten-free
  • 1 cup uncooked rice quinoa can be used for a nutritious twist
  • 1 medium red bell pepper other colored peppers can replace it
  • 1 medium jalapeño leave it out for milder flavor
  • 1/2 medium red onion white onion or scallions are good alternatives
  • 2 cloves garlic resist substitution for best results
  • 1 cup corn kernels canned or fresh works perfectly
  • 1 can black beans pinto beans can be swapped
  • 1/2 cup cotija cheese feta or dairy-free cheese are good substitutes
  • 1/2 cup sour cream Greek yogurt can be a healthier option
  • 1 tablespoon honey maple syrup or agave can be used
  • 1/4 cup fresh cilantro parsley can be used if cilantro isn’t preferred
  • 1/4 cup water used for adjusting sauce consistency

Method
 

Preparation
  1. Marinate Chicken: Pat the chicken dry, then dice it into bite-sized pieces. Combine the chicken with olive oil, lime juice, chili powder, onion powder, garlic powder, smoked paprika, salt, and chipotle pepper in a mixing bowl. Let it marinate for 15 minutes to 24 hours for deeper flavor.
  2. Cook Rice: While the chicken is marinating, prepare the rice according to the package instructions.
  3. Sauté Chicken: Heat a skillet over medium heat. Add the marinated chicken and sauté for 12-15 minutes until cooked through. Set the chicken aside once cooked.
  4. Sauté Vegetables: In the same skillet, add chopped red bell pepper, jalapeño, and red onion. Sauté for about 8 minutes, then add garlic.
  5. Combine: Return the cooked chicken to the skillet and mix with vegetables until warmed through. Prepare tortillas for wrapping.
  6. Assemble Wraps: Layer wraps with rice, chicken-vegetable mixture, black beans, corn, cotija cheese, and sauce. Fold and wrap tightly.
  7. Serve: Enjoy immediately or serve with salad, fruit, or roasted vegetables.
