How to Make Savory Hearty Garlic & Sweet Potato Lentil Stew
- Start by peeling and dicing the sweet potatoes into small cubes. Chop the onion and mince the garlic.
- In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Toss in the sweet potato cubes and sprinkle with cumin. Sauté for another 3 minutes.
- Stir in red lentils and vegetable broth. Bring to a gentle boil, reduce heat, cover, and simmer for about 20 minutes.
- Add fresh spinach during the last 5 minutes of cooking until wilted.
